There are too many great Japanese dishes to list here!
Here are two of my favorites: one salty, one sweet.
This is agedashi tofu: It is fried (age) tofu in dashi broth, usually garnished with ginger, scallion, and bonito flakes.
Next is oshiruko, a famous dessert. It is a red bean soup with mochi. Actually, it's quite difficult to find in the US.
